Here is a complete New Year's Eve dinner menu for six people: three starters, three salads, a roast with a side, a make-ahead dessert and a homemade drink. Below you will find quantities for every dish, one combined shopping list by store section and a plan for what to cook ahead, so you are not in the kitchen from breakfast to midnight on 31 December.
The usual mistake on New Year's Eve is not the choice of dishes but the number of them. Eight dishes "just in case" turn into two days of cooking and a fridge full of leftovers until the 3rd. This menu follows a simple formula, and the food is counted to cover the party plus a relaxed New Year's Day.
How to plan a New Year's Eve menu: the table formula
How many dishes you need
For four to eight people, this structure is enough:
2–3 starters that go on the table first: a cheese board, pinwheels, crudités.
3 salads: one creamy classic, one fresh winter salad and one roasted-vegetable salad.
1 main and 1 side that cook in the oven without your attention.
1 dessert made the day before, plus clementines.
Drinks: one homemade non-alcoholic option, something sparkling and water.
How much food per guest
Plan these portions per adult: starters 150–200 g, salads 350–400 g in total (allowing for New Year's Day leftovers), meat 200–250 g raw weight, side 200–250 g and dessert about 150 g. Count roughly half for children. If guests arrive after dinner, drop the main course and keep starters, salads and dessert.
Ask about dietary needs when you invite people. In this menu the cheese board, the beet salad, the winter salad and the potatoes are vegetarian, and the pork can be swapped for salmon without changing the timeline much.
A ready New Year's Eve menu for 6
Starters
Cheese board: three cheeses at 120 g each (hard, soft and blue), 300 g grapes, 100 g walnuts, 100 g dried apricots or dates, honey and crackers.
Smoked salmon pinwheels: 2 large flour tortillas or flatbreads, 250 g smoked salmon, 200 g cream cheese, 1 cucumber and a bunch of dill. Cuts into 24–30 pieces.
Crudités and pickles: 300 g cucumbers, 250 g cherry tomatoes, 1 sweet pepper and a jar of olives or pickles.
Salads
Olivier salad, the Eastern European chicken and potato salad (about 1 kg): 300 g chicken breast, 400 g potatoes, 150 g carrots, 4 eggs, 200 g gherkins, 250 g peas, 180 g mayonnaise and chives.
Winter salad with fennel, orange and pomegranate: 1 fennel bulb, 2 oranges, 1 pomegranate, 100 g mixed leaves, 3 tbsp olive oil and the juice of half a lemon.
Roasted beet salad with rocket and goat cheese: 400 g beetroot, 100 g rocket, 150 g soft goat cheese, 50 g walnuts, 2 tbsp olive oil and 1 tbsp balsamic vinegar.
Main and side
Roast pork shoulder with mustard and garlic: 1.5 kg boneless pork shoulder or collar, 2 tbsp wholegrain mustard, a head of garlic, salt, pepper and rosemary. You can swap it for a whole chicken or two 600 g pieces of salmon.
Rosemary roast potatoes: 1.5 kg potatoes, 3 tbsp oil, salt and garlic powder. They roast on the lower rack of the same oven.
Dessert and drinks
Make-ahead cake: honey cake or cheesecake, homemade or bought, about 1.2 kg. Both are better after a night in the fridge, so make it on 30 December. Serve with 1.5 kg clementines.
Cranberry punch: 300 g frozen cranberries, 150 g sugar and 2 litres of water, simmered and chilled. Add 2 bottles of something sparkling and 3 litres of water.

What to make ahead: a plan for 27–31 December
27 December: the plan and long-life shopping
Check the fridge and freezer and clear one shelf for prepared food. Buy everything that keeps: pantry items, jars, drinks, frozen cranberries and peas, nuts and dried fruit. Shops are still calm on these days.
29 December: perishables and the punch
Buy the meat, fish, cheese, herbs and fruit. Make the cranberry punch base and refrigerate it. If you bake the cake yourself, bake the layers or the base today.
30 December: the main prep day
Rub the pork with mustard and garlic and refrigerate it until tomorrow.
Boil the potatoes and carrots for the Olivier, the eggs and the chicken. Roast the beetroot in foil for the third salad.
Assemble or finish the cake so it can set overnight.
Put the cooled vegetables in shallow containers and refrigerate them straight away. Keep them whole; they taste better if you dice them tomorrow.
31 December: an hour-by-hour plan
10:00 — segment the oranges, seed the pomegranate and mix the dressings. Store each in its own container.
12:00 — dice everything for the Olivier into one bowl, without mayonnaise.
14:00 — make the salmon pinwheels, wrap them tightly in film and refrigerate.
16:30 — take the pork out of the fridge to lose its chill.
17:30 — pork into the oven. Follow your recipe, usually 1.5–2 hours for a 1.5 kg piece, and check doneness with a thermometer.
19:00 — potatoes onto the lower rack.
20:30 — set out the cheese board and crudités, slice the pinwheels.
21:00 — dress the Olivier and assemble both leafy salads right before serving so the leaves stay crisp.
21:30 — sit down. Cake and clementines after midnight.
Some prep can happen a week earlier and go into the freezer. See which foods you can freeze before they spoil.
How to store salads and leftovers after the party
The US Department of Agriculture advises refrigerating cooked food within 2 hours, keeping it at 40°F (4°C) or below and eating leftovers within 3–4 days. Frozen leftovers keep 3–4 months for best quality. Divide large amounts into shallow containers and cut big roasts into smaller pieces so they cool faster. Details are in the USDA guide to holiday leftovers.
In practice: set a two-hour timer when the salads go out, put back what is not eaten and serve in smaller bowls you can refill. Dress the Olivier in batches; undressed diced vegetables keep better than a dressed salad.
How to stay on budget and not overbuy
Count guests, not dishes. People first, then portions, then the list. Six people will not eat six salads.
One expensive ingredient per dish. Smoked salmon in the starter, not in a salad too; goat cheese in one salad, not on the board as well.
Plan New Year's Day now. Leftover pork, potatoes and beets become the next day's lunch if you have already decided what they will be.
Buy long-life items early. Drinks, jars and pantry staples often run low or cost more right before the 31st.
Build your New Year's Eve menu in Dishday
In Dishday the menu above takes a couple of minutes. Add the dishes to 31 December and 1 January in the meal planner; your own recipes can be imported from a link, including TikTok and Instagram. The app merges the ingredients of every dish into one grocery list, where potatoes for two dishes are a single line, and you cross off what is already at home.
On 1 and 2 January, when the fridge holds half a roast, some beetroot and a few eggs, snap a photo of the shelves and Dishday suggests what to cook from what you have. The app does not check storage times or allergens; those checks stay with you.
Frequently asked questions
What should I make for a New Year's Eve dinner party?
A reliable structure is 2–3 starters (cheese board, smoked salmon pinwheels, crudités), 3 salads (one creamy, one fresh, one roasted), an oven roast with potatoes and a dessert made the day before, such as cheesecake or honey cake. That covers 6–8 people.
How much food do I need for New Year's Eve for 6 people?
Eight to ten items are usually enough: three starters, three salads, one main, one side and dessert. Per adult, plan 350–400 g of salads in total, 200–250 g raw meat and 150–200 g of starters.
What can I make ahead for New Year's Eve?
One or two days ahead you can make the punch base and the dessert, marinate the meat and boil the vegetables, eggs and chicken for the salads. On the day, dice and dress the salads close to serving time.
How long do New Year's Eve leftovers last?
The USDA advises refrigerating food within 2 hours, keeping it at 40°F (4°C) or below and eating leftovers within 3–4 days. Dress mayonnaise salads in batches so you are not storing a whole dressed bowl.
What is an easy New Year's Eve main course?
A roast that cooks on its own: pork shoulder, a whole chicken or a side of salmon, with potatoes roasting on the lower rack of the same oven. Marinate the day before and the active work on the 31st is about 15 minutes.
Start with the list, not the stove
Decide on the number of guests, use the formula of three starters, three salads, a main and a dessert, count the food and split the cooking between 30 and 31 December. You will sit down to dinner rested. To keep the menu, one merged shopping list and New Year's Day ideas in one place, download Dishday on the App Store.
