Useful advice

Cooking tip

If dairy is restricted, replace kefir with coconut or oat milk plus 0.5 tsp of lemon juice. For a gluten-free allergy, use a mix of rice and corn flour (60 g each). The egg in this recipe can simply be omitted — pumpkin-banana puree holds the structure wonderfully.

How to serve

Stack the pancakes and serve with a dollop of natural yogurt or fruit puree.

How to store

Store in a container in the refrigerator for up to 2 days — they remain soft even when cold.

Note

To save time on pumpkin in the morning, you can use ready-made baby pumpkin puree from a glass jar (130–150 g without salt and additives).
