Your homemade masterpiece is ready! Pour the hot soup into deep bowls, making sure that each portion contains equal portions of shrimp and mushrooms (large pieces of lemongrass and galangal should not be eaten, they are left in the plate for beauty). Cooking tip
Do not overcook the shrimp, or they will become tough. It is best to add lime juice at the end to keep the flavor vibrant. You can easily adjust the heat level with the amount of chili and tom yum paste. Fresh lemongrass and galangal are great for aroma, but if they are hard to find, you can skip them and use only tom yum paste, since it already contains all these traditional roots and herbs in a blended form.

Serve very hot. Serve the rice separately or in small portions next to the soup.
How to store
The soup is best enjoyed immediately after cooking. Broth without shrimp can be stored in the refrigerator for up to 1 day and then brought to a finish before serving.
Note
In a homemade version, it is convenient to use ready-made tom yum paste, as the ingredients and heat level can vary from brand to brand. Coconut cream makes the taste smoother and tones down the extra spiciness.
